I’m always looking for new ways to introduce healthy ingredients to Sherry as she focuses on fighting off cancer. For this recipe, I chose radishes because they aid in digestion and are at their peak of freshness in spring and early summer. Radishes also contain phytonutrients, fiber, vitamins and minerals that help fight cancer.

Ingredients:

2c black radishes (any color may be used)

5 oz arugula

2T raw unsalted pumpkin seeds

2 cloves garlic

½ c pumpkin seed oil

½ c white wine vinegar

Instructions:

  • Slice or julienne the radishes with a mandolin.
  • Toss with fresh arugula and season with salt and pepper to taste.
  • In a high-powered blender, combine remaining ingredients to make dressing.
  • Dress the salad just before serving.
