This is a simple, quick convenient way to get protein into your meal, paired with seasonal heirloom tomatoes and fresh, vibrant herbs. The dressing helps as a digestive aid, and the balsamic vinegar adds a bit of sweetness without adding sugar and a nice acidity to balance out the tomatoes.


  • 4-6 oz pulled roasted chicken (Do yourself a favor and buy a rotisserie chicken – many stores even carry organic if preferred!)
  • 3 medium heirloom tomatoes, cut in 1/8 segments
  • 2T chopped fresh tarragon
  • 2T chopped fresh dill


  • 6T white balsamic
  • 2T Dijon mustard 
  • Salt and pepper to taste
