Indian-Spiced Roasted Salmon

Ingredients
- 1 side wild-caught salmon
- 2 teaspoons olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon curry powder or garam masala
- 1/2 teaspoon kosher or sea salt
Directions
- Pre-heat oven to 400º.
- Line a rimmed baking tray with foil and lay the salmon, skin-side down in the middle of the engrossed foil (doing this will make separating the salmon filet from the skin a breeze ~ if the salmon doesn’t have skin or you like to eat the skin, brush the foil with oil first.)
- Brush the top of the salmon with olive oil and sprinkle turmeric, curry powder or garam masala and salt, evenly over the fish.
- Roast in a pre-heated oven for about 10 minutes. Remove from oven and slide a metal spatula between the skin and the meat– it should separate easily.
Makes 3-4 six- to eight-ounce servings
